Turkey Meatballs in CRACK'd Walnut Butter Curry Sauce

1. Preheat oven to 375 degrees. Place the following ingredients in a large mixing bowl to prepare meatballs: ½ kg Ground Turkey, 1/4 cup chopped Basil, 1 tbsp Fish Sauce, 1 tbsp Red Curry Paste, 3/4 cup Breadcrumbs, 1 Egg, 1/4 tsp Salt, 1/4 tsp Pepper.

2. Mix all ingredients together and form into 2,5 cm (d) balls.

3. Place on a baking sheet lined with parchment paper and bake for about 30 minutes, or until cooked through.

4. In the meantime, prepare the walnut curry sauce. In a skillet over medium heat add: 1 tbsp Sesame Oil, 1 tbsp Red Curry Paste

5. Cook for a couple minutes, until fragrant. Then add: 400 ml Coconut Milk, 2 tbsp Crack’d Walnut Butter,1 tbsp Brown Sugar 1/4 tsp Red Pepper Flakes, 1/4 tsp Salt, 1/4 tsp Pepper

Serve with rice, potatoes, or your favorite veggie, and be generous when topping with the walnut curry sauce. Enjoy!
